Pantry Challenge

One of my favorite and slightly obsessive things to do is figuring out how to use everything in my pantry, fridge and freezer before I travel. Usually I stop buying anything except produce and milk a week or two before a big trip. Carlos humors me as I try out new ingredient combinations. But you know, being resourceful is also the best way to learn to cook and to try new flavors.

Moving is an entirely different ball game for the pantry challenge. Truth be told, I have a hell of a pantry and pride myself on the variety of pastas, rice, teas and spices that I have acquired. But I am not packing and storing a bag of rice for a year and thus it is my burden to figure out what to make with all of this stuff.

When my afternoon sweet tooth kicked in today I jumped at the chance to meet my pantry challenge of the day (don’t ask how old the ingredients are. Doesn’t matter.): graham crackers, dates, cashew butter, kettle corn (I didn’t buy it, Carlos did), honey, vanilla and a pinch of salt. Probably didn’t need the honey because the dates are so sweet but, well, we have too much honey. I used pulsed everything until crumbly in the cuisinart


Date Balls with Kettle Corn

Combine all ingredients in food processor and roll into balls.

  • 10 dates
  • 2 cup kettle corn
  • 2 tablespoons cashew butter
  • 6 graham crackers
  • pinch of salt
  • squeeze of honey
  • 1 teaspoon vanilla
